I have not yet pushed these limits with Linux, either 2.2 or 2.4 kernel, but I'd be willing to bet that the 75% of physical memory is close to what you can get away with ...
In Linux 2.2 I routinely run problems in R (with X installed) that take 5 to 6 times physical memory. Sometimes there is thrashing, but not always. It depends on the problem. I don't recall ever having a crash.
