Yes, and the body should be written in Rd markup, not R. Working out
the appropriate number of escapes is painful; I recommend trial and error.
This worked for me:
\newcommand{\today}{\Sexpr{format(Sys.Date(),"\\\%d/\\\%m/\\\%Y")}}
