coarsening a grid

Nick - note that for plotting, raster:::plot by default only plots a 
subset of the pixels.  You can use the 'maxpixels' argument to control 
how many pixels it uses.  See ?raster:::plot

Thanks to both!  Even for plotting a large grid, these are good
options for speeding that up where the full resolution isn't needed...
