Points to raster

Or, using raster package:

r.elev <- rasterFromXYZ(elev)
In either case, if your coordinates aren't quite regular you'll need
to explore other options, like the 'tolerance' argument to
?SpatialPixelsDataFrame or the 'digits' argument to ?rasterFromXYZ.
